This is a really good outline of what to eat during the week. Cheese is a funny thing. I can go weeks without eating it, but once I add it to something, I have to add it to everything. It's a slippery slope. 🧀. This is a great line: "Cognitive decline doesn’t wait for retirement."

Well said. I would also add that the focus on polyphenols and prebiotic fiber likely does more than just provide direct antioxidant protection. It seems to “train” the gut microbiota to produce metabolites like short-chain fatty acids and BDNF-boosting indoles that support neuroplasticity and resilience.
